If a simple sandwich gets famous and then goes up in price, it isn't the fault of people outside the neighbourhood, it's the fault of they guy who runs the bodega on the corner. He realizes that he can do business where last week a chopped cheese went for $4, this week, he can sell it for $10.
He's making a profit from the demand. People get mad that things get popular but, that's just a small downside for an otherwise hyper-efficient capitalist system works. Also an option is making them at home for next to nothing. Bread, ground beef, provalone cheese, some spices and thinly sliced lettuce? It's not like this would be that hard nor expensive to make.
