Mac and Windows user here, mostly Windows.
While Microsoft is busy letting you touch the entire display, Apple’s making you look down at your keyboard to interact instead
Microsoft adjusted their GUI years ago so you could use touch input at the cost of making it blocky - elements that you interact with need to be large enough to accurately accept the press of a finger without triggering a neighbouring function. You can't use OSX with a touch display because the elements that you interact with are too small. It's made for pointer input, and Apple shits on everyone when it comes to the touch-pad. I'd rather diddle with a trackpad (a very accurate, pleasurable one at that) that's hugging the keyboard than get a sad workout reaching across a screen to access a function. I suspect most power users are the same. The strip below that you can touch is contextual, in your field of view and you don't need to lift your arm. I often need to look at the F keys anyway because they're not part of my muscle memory.
What video editors are going to do edits on a tiny touch bar below the screen?
Probably none if that's all it did - the UI on the miniature display mostly adds contextual and navigational information (as in you can see the length/scope and layers that you're working with) which is useful when the tips of your fingers only need to move a few centimetres and the UI is in the same field of view as the screen itself.
Apple only cares about the Mac when it’s convenient, but even then, it’s obviously not thinking that hard about the impact is has.
Pretty weak ending. The SSD's bandwidth is fucking ridiculous to the point that the 16gb limit almost becomes meaningless, touch ID/secure enclave for fast user switching/auth, next-gen graphics, significantly brighter display with a wider colour gamut, can drive multiple 5k displays, longer battery life which is the most important thing for a portable computer, lighter, a touch pad that's about four times the size of the average non-Apple track pad. I like it. It's expensive but it's quality.
Buy a desktop if you want more strength than endurance i.e. battery life/performance per watt.
