I use IRC over XMPP almost daily, with a transport that connects me to a channel and represents it as multi-user chat, like #maemo%irc.freenode.net@irc.netlab.cz.
The primary reason is that XMPP behaves really nice if the connection is spotty: When I am using IRC in a moving train, I almost never timeout even if the network is not reachable for minutes – and as soon as the client reconnects, I get all the messages from the chatroom.
