Using physics-based models will make it even more frustrating and complicated. You'd have to take into account "temperament" or tuning, which someone else has already mentioned. Then, the relationship between frequencies is dependent on what intervals one decides should sound good.[0]
Music theory is an abstraction: it tries to make a transient activity (musical performance) amenable to being described on paper. Maybe an appropriate analogy is mathematics to physics. You can't learn to program a computer by learning only abstract grammar.
