Why not just use an iPhone app that records to a lossless format? FourTrack for example? I assume the author is talking about his experience with Apple's bundled Voice Memos app which is predictably designed for small/compressed audio memos not lossless recordings. From an openness perspective I'm not sure AAC is radically different from MP3. Both are well supported commonly used web formats either way.
