I used a Node library to make a trivial SMTP server that just sends everything it gets to a Slack channel. If you're interested I can publish the repo, all you need is Node or Docker and a Slack webhook URL, and preferably a domain name for your server. (The A record is fine, you don't need to setup an MX.)
