Have you looked into RMarkdown? http://rmarkdown.rstudio.com/ http://rmarkdown.rstudio.com/ Just like you said, you just use $ or $$ to add LaTeX. I am not arguing you should write a 600 page book with RMarkdown + LaTeX (just use LaTeX in that case), but it has worked well for me for technical reports and presentation.
