It's not that bad. Check out https://github.com/sovereign/sovereign https://github.com/sovereign/sovereign for an example. I have my own ansible scripts to setup my mail server. It took a couple hours of hacking. Centos 7 provides a pretty good mail setup out of the box. All you need is to setup dkim and ssl certs (easy with letsencrypt).
