I think swiss watch producers should respond by producing dumb phones.
Let me explain: As every bum these days owns a smartphone that keeps him connected day in and out, there is a nascent need to differentiate. Smartphones have brought internet addiction, increased stress levels, and bad body posture. I believe freeing yourselves from these effects, freeing yourselves from being a slave of technologies and virtual social networks will be increasingly sought after as the millenials start aging. At the same time, you don't want to be completely cut off. So today, the only choice you have is to buy one of the remaining shabby feature phones.
The watch industry, on the other hand, is extremely good in creating an emotional experience for a commodity. They would be in the best position to turn a simple phone into an experience, into a device that reflects value and status.
The only instance I've seen so far is from the Swiss company Punkt. But when I look at their designs I go "meh". I think there is space for more variety.
Also, I do think that a phone today needs to come with a global phone book, which means basically Google Maps. So, it will probably still be a smartphone under the hood. I could even see reverse pricing applied - a basic version that can do everything, and as you go to a silver, gold, and platinum version, functionalities get locked down.
