How does Nike deal with saturation once everyone who's going to buy one gets a pair of Nike running shoes?

  Partially by expanding into clothing and sports gear and partially by turning themselves into a fashion company and convincing people that they have to own lots of different shoes in lots of different colors.

    And the obvious: they sell them another pair.

      But that does not contribute to growth because the supply is steady (unless Apple progressively reduces the life of their products.
